Parmesan Garlic Potatoes

909 g potatoes, cut into chunks 2 lb
3 ml salt 3/4 tsp
-black pepper to taste-
50 ml butter 4 tbsp
175 ml sour cream 3/4 cup
30 ml parmesan cheese 2 tbsp
1 garlic clove, minced 1
5 ml parsley, chopped 1 tsp
Recipe
In a medium saucepan; add potatoes and enough water to cover. Bring to a
boil; reduce heat and simmer until tender, about 15 minutes.
Drain water; place potatoes back in pan; add salt and pepper. Mash potatoes;
gradually add butter and sour cream. Add cheese, garlic and parsley.
