    Potatoes with Bacon and Garlic

    4 slices bacon
    4 large, about 2 pounds potatoes, unpeeled, cut into wedges
    2 medium sweet onions, sliced thickly
    1 head garlic, peeled
    2 tbsp. fresh thyme leaves or 2 tsp dried thyme
    1/2 tsp. each salt and pepper

    Preheat oven to 425 degrees. In a large roasting pan,
    cook the bacon until crisp, about 7 to 8 minutes. Remove
    and drain on paper towels, crumble and set aside. Pour
    the bacon fat into small bowl (there should be about a
    quarter (1/4) cup - if not, add olive oil). Place potatoes
    skin side down with the onions and garlic in roasting pan.
    Drizzle bacon fat over vegetables. Sprinkle with thyme,
    salt and pepper. Roast for about 45 minutes or until the
    potatoes are tender and lightly browned. Season more if
    needed and sprinkle with crumbled bacon. 4 servings.
