    Sour Cream Potato Salad

    4 pounds small red potatoes
    1/2 cup light mayonnaise
    1/2 cup light sour cream
    1 teaspoon salt
    1/2 teaspoon celery seed (or 1/2 cup chopped celery)
    1/2 cup chopped parsley
    1 bunch green onions -- finely chopped

    Recipe



    Cook potatoes in boiling water to cover in a Dutch oven for 30 minutes.
    Drain. When cool to touch, thinly slice potatoes.

    Stir together mayonnaise and next 6 ingredients. Gently stir mayonnaise
    mixture into potatoes.

    Cover and chill 4 hours. Top before serving with additional green onions,
    if desired.
