Sour Cream and Chive Whipped Potatoes

4 large potatoes, peeled and quartered
2 Tablespoons butter
1/4 cup sour cream
1/2 cup milk
Salt and pepper to taste
1 Tablespoon chives, freshly snipped
Recipe
Place the potatoes in a large saucepan and cover
with water. Cook until soft. Drain and place in
a mixer bowl. Add the butter and sour cream.
Whip on low. Gradually add the milk and increase
the mixer's speed until the potatoes are smooth.
Add the chives and adjust seasonings as needed.
