8 large baking potatoes
8 oz cream cheese
1 cube butter
8 oz sour cream
coarse ground pepper -- to taste
4 green onions -- chopped
milk
1 cup sharp cheddar cheese -- grated
Recipe
Bake potatoes as usual for 8. Cut in half lengthwise and scoop centers into a large bowl. Leave potato skins intact. Add butter, cream cheese, sour cream, salt/pepper, green onions with green ends. Whip or stir until light and blended, adding milk if necessary. Fold in cheddar cheese. Fill potato shells. Place filled halves on cookie sheet. Bake at 350 degrees for 20 minutes, longer if you've made them ahead and refrigerated them.
