Chicken Parmesan Scallopine

List of Ingredients
4 chicken breasts, pounded to 1/4-inch thick
1/4 cup flour
1/8 tsp. salt
1/8 tsp. pepper
1 egg
2 tbsp. water
1 cup dry bread crumbs
1/2 cup grated Parmesan cheese
1 tsp. dried parsley
1/4 tsp. dried basil
2 tbsp. butter or margarine
2 tbsp. olive or vegetable oil
Recipe
1. Stir together flour, salt and pepper in a shallow bowl. Beat together egg and water in another shallow bowl. Combine bread crumbs, Parmesan cheese, parsley and basil in a third shallow bowl.
2. Coat each chicken breast first in the flour mixture, shaking excess off, then in the egg mixture and finally in the bread crumb mixture, coating well.
3. In a large non-stick skillet over medium-high heat, heat butter and olive oil until butter melts. Add the coated chicken to the skillet and cook for 3 to 4 minutes on each side or until no pink remains. Drain on paper towels. Yield: 4 servings.
