Chicken Stroganoff

6 whole chicken breasts
salt
2 t. pepper
1 T. paprika
6 t. butter or margarine
3 lg. onions, chopped
1 T. prepared mustard
1 lb. mushrooms
1 pt. sour cream
Recipe
Sprinkle chicken with salt to taste, pepper and paprika; rub seasonings into chicken.
Sauté chicken on both sides in butter in Dutch oven or lg. saucepan; remove from
pan. Stir onions and mustard into pan drippings; lay chicken on top. Cover;
simmer for 45 min. Sauté mushrooms in separate pan. Remove chicken to platter.
Remove onions with slotted spoon; arrange over chicken. Pour mushrooms over chicken.
Stir sour cream into pan drippings; add 1/4 t. salt. Heat but do not boil. Pour some
of the sour cream mixture over chicken; pour remaining mixture into pitcher to serve at
table. Makes 6 servings.
