    3 Tbs butter
    3 Tbs all-purpose flour
    1 1/2 cups chicken broth
    1/2 cup light cream
    2 cups chopped cooked chicken breast
    1 cup frozen peas -- thawed
    2/3 cup frozen carrot slices -- thawed
    1/2 cup diced onion
    1/4 tsp thyme
    1/4 tsp sage
    1/2 tsp pepper
    8 oz herb-seasoned stuffing cubes
    1/2 cup butter
    1 cup boiling water

    Recipe



    Preheat oven to 400°F.
    Over low heat, melt butter in a saucepan. Add flour, stirring constantly until thick and smooth. Remove from heat and gradually blend in broth. Return to medium heat, stirring until thickened and smooth. Add cream, chicken, peas, carrots, onion, thyme, sage, and pepper. Cook until heated through. Meanwhile, prepare stuffing according to package directions using 1/2 cup butter and 1 cup boiling water. Press stuffing against sides and bottom of a greased 1 1/2 quart casserole. Pour hot chicken mixture into center of dish. Bake until done.
