Chicken with Butter Sauce

Recipe Introduction
I personally like to use boned chicken legs instead of chicken breasts. Chicken legs are fatter, but they taste better too. To make it a complete meal, steam some cauliflowers, mushrooms, or carrots and pour the sauce over them.
List of Ingredients
- 4 chicken breasts
- 2 Tbsps butter
- pinch of salt & pepper
- 2 Tbsps vinegar
- 1 Tbsp lemon juice
- 2 Tbsps flour
- 2 Tbsps water
- 2 Tbsps vegetable oil
- 2 egg yolks
Instructions
- ) Pound the chicken slightly to tenderize it. With a fork, prick the chicken a bit. Sprinkle pinch of salt and pepper, and then coat the chicken with some flour.
- Heat the oil and 2 tbsp of butter in a pan. Place the chicken in the pan and cook until both sides are golden brown. Keep on cooking until it is cooked thoroughly.
- In the in the meantime, make the butter sauce. Simmer the vinegar and water in a saucepan until it reduces to half.
- Remove the saucepan from the stove to cool slightly. Add the egg yolks and stir well.
- Add the butter and lemon juice. At a low heat, Stir the sauce and mix until smooth.
- ) Remove the chicken from the pan. Pour the butter sauce over the chicken and serve.
