Crispy Chicken Dijon

4 boneless skinless chicken breast halves
2 tablespoons all-purpose flour
4 tablespoons Dijon mustard
1/3 cup dry bread crumbs
2 tablespoons vegetable oil
Recipe
Rinse chicken; pat dry. Coat chicken pieces with flour, shaking off excess.
Spread chicken with mustard, then roll in bread crumbs to coat evenly.
In a large skillet, over medium heat, cook chicken in hot oil 4-5 minutes on
each side or until done. (If chicken browns too quickly, reduce heat to
medium-low.)
