    List of Ingredients




    4 chicken breasts, bone-in (or 1 whole chicken, cut up)
    1 cup yellow rice
    1 can diced tomatoes
    1/2 cup chopped onions
    1 cup frozen green peas
    1/2 cup chicken broth
    1 tbsp chili powder
    1 tsp powdered cumin
    salt and pepper to taste

    Recipe



    Add rice, vegetables and broth to 13 X 9 pan that has been sprayed
    with cooking spray. Top with chicken. Sprinkle chicken with
    spices. Cover pan with foil and bake at 425 for 45 minutes to 1
    hour. Rice should be fluffy and tender, but not overly moist. Test
    chicken for doneness. If you'd like take off foil about 15 minutes
    before meal is cooked to brown chicken a bit.
