Garlicky Chicken Packets

1 cup julienned carrots
1/2 cup sliced onion
1/4 cup chopped fresh basil or 1 T. dried basil leaves
2 T. mayonnaise
6 cloves garlic, minced
1/8 t. black pepper
4 boneless skinless chicken breast halves
Recipe
Cut foil into 4 (12") squares. Preheat oven to 400. Place a quarter of
carrots and onion in center of each foil square. Combine basil, mayonnaise, garlic
and pepper in small bowl. Spread mixture on chicken. Place chicken, mayonnaise
side up, on top of vegetables. Double fold sides and ends of foil to seal
packets, leaving head space for heat circulation. Place packets on baking sheet.
Bake 20-25 minutes or until juices run clear and chicken is no longer pink in
center. Recipe Tip: for a more elegant presentation, prepare this recipe in
parchment instead of foil. Cut parchment into 4 (12") squares. Fold in half and
cut into heart shapes. Place vegetables and chicken close to fold on one side
of parchment hearts. Fold parchment over chicken; seal by creasing and folding
edges in small overlapping sections from top of heart to point. Finish by
twisting point and tucking under. Bake as directed. Remove parchment packets from
oven and place directly on serving plates. Cut open and fold back to reveal
chicken and vegetables. Serves 4.
