1/4 cup Dijon mustard
3 tbs honey
2 tsp lemon juice
1 cup plain bread crumbs
6 boneless skinless chicken breast halves
1 tbs vegetable oil
Recipe
Heat oven to 375 degrees. Grease a 15X10X1 inch jelly roll pan. Combine mustard, honey and lemon juice in a shallow dish. Place bread crumbs in a second shallow dish.
Dip chicken in the mustard mixture, turning to coat pieces. Dredge in bread crumbs to cover. Place in pan. Drizzle oil over the top of chicken. Bake 22 min. or until the temp is 160 degrees. MAKES 6 SERVINGS.*
