    In a Hurry Chicken Curry

    1 cup plain yogurt*

    1/2 cup buttermilk

    1 tbsp. lemon ! juice

    1 tbsp. curry powder

    3 tsps chopped garlic

    2 tsp. grated fresh ginger root

    2 tsp. Montreal Chicken seasoning*

    1 tsp. salt

    1/4 tsp cayenne pepper*

    1 whole chicken, cut into pieces*

    Recipe



    Blend all ingredients (I used the ziploc bag that contained my thawed chicken pieces) and toss chicken to coat well. Cover and marinate in refrigerator for 2 hours.

    Preheat oven to 450F. Remove chicken from marinade and arrange in roasting pan. Discard marinade. Roast for 15mins then lower heat to 350 and cook for 40 minutes longer or until thermometer inserted in chicken, not touching bone, reads 170F.

    *I had on hand only sour cream, having forgotten to buy plain yogurt.

    *I didn't purchase Montreal chicken seasoning. I had the steak seasoning on hand and reasoned the i! ngredients were likely very similar anyway and so I just used that.

    *No cayenne pepper either. I used crushed red pepper and I suggest you go very easy on that if you use the same because the ginger root will take on the heat of the pepper and multiply it. Mine was a teeny bit hotter than I'd like.

    * I subbed bone-in chicken thighs for the whole but up chicken. I don't really care for dark meat but could eat it cooked in this way as the marinade disguises a lot of the taste of the dark meat.
