    Mennonite Chicken Dumpling Casserole

    List of Ingredients




    1 onion, chopped
    1/2 cup chopped celery
    2 cloves garlic, minced
    1/4 cup butter or margarine
    1/2 cup all-purpose flour
    2 teaspoons sugar
    1 teaspoon salt
    1 teaspoon dried basil
    1/2 teaspoon pepper
    4 cups chicken broth
    1 (10 ounces) package frozen peas
    4 cups cubed cooked chicken
    DUMPLINGS
    2 cups buttermilk baking mix
    2 teaspoons dried basil
    2/3 cup milk

    Recipe



    6 servings1. In a large saucepan, saute onion, celery and garlic in
    butter until tender.
    2. Add flour, sugar, salt, basil, pepper& broth; bring to a boil.
    3. Cook& stir for 1 minute; reduce heat.
    4. Add peas& cook for 5 minutes, stirring constantly.
    5. Stir in chicken.
    6. Pour into a greased 9x13 pan.
    7. DUMPLINGS: Combine biscuit mix& basil (2 t.) in a bowl.
    8. Stir in milk w/ a fork until moistened.
    9. Drop by tablespoon onto casserole (12 dumplings).
    10. Bake uncovered@ 350 for 30 minutes.
    11. Cover& bake 10 minutes longer or until dumplings are done.
