1 frying hen, cut into serving pieces
water to cover
2 tbsps salt
Recipe
Soak chicken in salt water for at least 1/2 hour, and up to
overnight, if kept in refrigerator.
Flour
salt
pepper
paprika
1 cup each of butter and olive oil
2 crushed cloves garlic
Mix flour with salt,pepper, and paprika. Drain chicken. Heat butter
and oil to 400°F. Dip chicken pieces in flour mixture.If breast
halves are especially large cut into two pieces each for more even
cooking. Drop garlic into hot oil and add chicken skin side down,,
being careful not to crowd.
Cook about 15 minutes on skin side until golden brown, then turn
pieces. Let cook about 15 minutes on that side and turn again to
crisp skin.
