Ranch Picnic Potato Salad

6 medium sized potatoes, cooked, peeled & diced
½ c. chopped celery
¼ sliced green onions
2 tbsp. parsley
1 tsp. salt
1/8 tsp. pepper
1 tbsp. Dijon mustard
1 c. prepared Hidden Valley Ranch original Ranch salad dressing
2 hard boiled eggs, chopped
Paprika
Recipe
Combine potatoes, celery, onion, parsley, salt and pepper.
In another bowl, mix mustard into salad dressing and pour over potatoes.
Toss lightly.
Sprinkle paprika and eggs.
Refrigerate for several hours.
Makes 8 servings.
