    2 tablespoons reserved chicken grease
    2 tablespoons all-purpose flour
    2 cups milk
    3/4 teaspoon salt
    3/4 teaspoon freshly ground black pepper

    Right after frying the chicken, slowly and carefully drain off the grease
    into a heatproof bowl, keeping as many of the browned bits behind in the
    frying pan as you can. Slowly pour the grease into another heatproof bowl
    to capture any stray brown bits and return them to the pan. Also return 2
    tablespoons of the grease to the pan.

    Heat the pan over medium-low heat until hot. Add the flour and cook,
    stirring, for 1 to 2 minutes, scraping up the brown bits. Add the milk
    and increase the heat to medium. Cook, stirring occasionally, until the
    gravy comes to a gently boil. Simmer, stirring often, until the gravy is
    smooth, shiny, and thickened. Stir in the salt and pepper to taste.
    Transfer to a serving bowl and serve at once.
