    Blueberry Scones

    List of Ingredients

    2 cups flour
    1/3 cup packed brown sugar
    1 tbsp. baking powder
    1/4 tsp. salt
    1/4 cup cold butter, cut up
    1 cup fresh or frozen blueberries
    1/2 cup heavy cream or half and half
    1 egg
    Coarse sugar


    Recipe

    1. Heat oven to 375º.

    2. In a large bowl, stir together flour, sugar, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Toss in blueberries.

    3. In a small bowl, whisk cream and egg together. Slowly pour into dry ingredients and stir just until a soft dough forms. Gently knead with hands until dough comes together; do not overmix.

    4. Turn dough onto surface sprinkled lightly with flour. Gently pat into a 9-inch round. Cut into 12 wedges.

    5. Place scones on ungreased baking sheet; sprinkle generously with sugar. Bake until light to medium brown in color, about 20 to 25 minutes. Yield: 1 dozen.
