    Scones:
    2 cups flour
    1/2 cup sugar
    2 t. baking powder
    1/4 t. salt
    1/2 cup butter or margarine, chilled (1 stick)
    2 large eggs
    1/3 cup heavy whipping cream
    2 T. instant coffee
    1/4 t. vanilla extract

    Brown sugar Cinnamon Topping:
    1/4 cup flour
    2 T. firmly packed brown sugar
    1/8 t. ground cinnamon
    2 T. butter or margarine
    Powdered sugar for sprinkling on top of the scones (optional)
    Fresh fruit and mint sprigs, for garnish (optional)

    Mix the flour, sugar, baking powder and salt in a large bowl. Using a pastry
    blender or 2 knives, cut in the butter until the mixture resembles coarse
    crumbs. Beat the eggs in a medium bowl. Stir in the cream, instant coffee, and
    vanilla until well blended. Add to the flour mixture and stir until a soft dough
    forms. Shape the dough into a ball. With lightly floured hands, pat the dough
    into an 8 to 9" circle on the prepared baking sheet. Prepare the Brown Sugar
    Cinnamon Topping: Mix the flour, brown sugar and cinnamon in a small bowl.
    Using a party blender or 2 knives, cut in the butter until the mixture resembles
    coarse crumbs. Sprinkle the topping mixture on the scone dough. With a serrated
    knife, cut the circle into 8 wedges, being careful not to cut all the way
    through. Bake for 12-14 minutes or until a toothpick inserted in the center comes
    out clean. Sprinkle the scones with powdered sugar, if desired. Garnish with
    fresh fruit and mint sprigs, if desired. Serve warm. Cut into wedges to serve.
    Makes 8 scones.
