    1 1/4 cups flour
    2 T. sugar
    2 1/2 t. baking powder
    1/2 t. salt
    6 T. butter or margarine
    2 large eggs
    1/4 cup milk
    1 T. instant coffee
    1/2 cup raisins

    Recipe



    Heat oven to 425. Lightly butter a large baking sheet. Mix the flour, sugar,
    baking powder, and salt in a large bowl. Using a pastry blender or 2 knives,
    cut in the butter until the mixture resembles coarse crumbs. Beat the eggs in a
    small bowl; stir in the milk and instant coffee. Add to the flour mixture.
    Stir until a soft dough forms. Stir in the raisins. Knead the dough on a lightly
    floured surface until smooth. Pat into a 12 x 4" rectangle. With a sharp
    knife, cut the dough into 4" squares. Cut each square into 4 triangles. Place the
    scones on the prepared baking sheet. Bake for 10-12 minutes or until golden
    brown. Remove the scones from the baking sheet and cool slightly on a wire rack.
    Serve warm. Makes 1 dozen scones.
    For a glaze, stir 1 T. of water and 1/4 t. of instant coffee in a small bowl
    until well blended. Add 1/2 cup of powdered sugar and mix well. Drizzle the
    glaze over the warm scones.
