Pumpkin Scones

List of Ingredients
1 tbsp butter
1/2 c. sugar
1/4 tsp salt ( I usually dont add the salt)
1 egg
1 cup mashed pumpkin (cold) Dont use Jap. pumpkin as it's too watery.
2 - 2 1/4 cups self raising flour
Recipe
Beat together butter, sugar & salt using elec. mixer. Add egg, then
pumpkin. Finally stir in by hand the sifted flour. Turn onto a
floured board & cut. Place on a heated floured tray & cook on the
top shelf of a very hot oven 225 - 250, 15 - 20 mins.
I now don't measure the pumpkin & flour as I make a bigger batch, I
just keep adding flour until it's not so moist.
