Hearty Potato Cheese Soup

List of Ingredients
5 medium potatoes
1 large onion
1 teaspoon salt White pepper, to taste Mixed herbs (Mrs. Dash)
1 to 1 1/2 cup dry instant potatoes
3 cups chicken broth
4 cups American or Pimento cheese, grated Recipe
Finely dice the potatoes and onion; put into large saucepan, add
seasonings and water to cover the vegetables.
Cook until tender.
Add chicken broth, heat, and add enough instant mashed potatoes to
thicken the soup.
Check and adjust seasonings.
Stir in cheese until it melts, stirring constantly.
Recipe can be halved or extra soup frozen for another day!!
Garnish with crumbled bacon and sliced green onion or parsley.
