List of Ingredients
2 1/2 quarts chicken broth
1 lb. leaner ground beef (or a mixture of ground beef and pork)
1/4 c. dry bread crumbs
2 eggs, slightly beaten
2 T. minced onion (I have the Tastefully Simple Onion Onion on hand)
1/4 c. parmesan cheese
2 c. spinach (packed and chopped fine)
1 c. small pasta (we like the tiny sea shells)
Recipe
In a large pot, set your broth to boil. In the meantime, mix your
ground beef, bread crumbs, eggs, minced onion and parmesan cheese.
Form into small meat balls (mine were between 1/2" and 3/4") and set
aside.
Once your broth boils, lower heat to medium and add your meatballs,
spinach and pasta. Bring to a boil and then simmer about 10 more
minutes. Remove from heat, cover and let set.
