Lobster Bisque

List of Ingredients
3 green onions, sliced and divided
2 Tbs margarine or butter
1/4 cup all-purpose flour
1 1/2 cups milk
6 oz cubed, cooked lobster
or crabmeat, drained and flaked
or frozen, peeled, cooked shrimp
or lobster-flavored chunk-style fish pieces
1 1/2 cups half-and-half
or light cream
1/4 cup dry sherry
or milk
1/4 tsp salt
dash ground white pepper
Recipe
1 Reserve 2 tablespoons sliced green onion tops for garnish. Cook and stir remaining green onions in margarine in medium saucepan over medium heat for 1 minute.
2 Stir in flour until smooth. Gradually stir in milk; cook, stirring until mixture thickens and boils. Cook and stir 1 minute more.
3 Add seafood, half-and-half or light cream, sherry or milk, salt and white pepper. Cook and stir until heated through. To serve, ladle soup into bowls. Garnish with reserved green onion tops.
