List of Ingredients
1 pound package mini-carrots, diced
1/2 cup Swiss cheese, shredded
1/4 teaspoon nutmeg
1 cup chicken broth
Recipe
Cook carrots in broth until tender. Drain and keep broth. Mash carrots. Combine carrots, cheese, and nutmeg. Add some of the broth (about 1/2 cup) to make carrots creamy. Place in casserole and bake at 350 degrees for 15 to 20 minutes.
