    Ginger Glazed Carrots

    2 tablespoons butter or margarine -- divided
    3/4 cup water
    1 pound baby carrots
    2 tablespoons honey
    2 tablespoons orange juice
    3/4 teaspoon ground ginger
    1/8 teaspoon ground nutmeg
    1/8 teaspoon salt
    1/2 teaspoon parsley flakes

    Recipe



    Place 1 tablespoon butter and water in skillet. Add
    carrots; cover and cook over medium heat for 5-6
    minutes or until carrots are slightly tender. Drain,
    leaving carrots in skillet.

    Combine honey, orange juice, ginger, nutmeg, and salt
    in a small bowl. Pour over carrots and add remaining
    1 tablespoon butter.

    Cook, uncovered, over medium heat, 4-5 minutes,
    stirring frequently to glaze carrots. Sprinkle with
    parsley just before serving.
