Café Tu Tu Tango shared this recipe in 1991. It's the perfect accompaniment to tortilla chips.
List of Ingredients
• 3 cups cooked black beans
• 1-1/2 cups frozen corn kernels, defrosted
• 1 pound tomatillos, diced (or less to taste)
• 1 bunch green onions, trimmed and finely chopped
• 1 green bell pepper, seeded and finely chopped
• 1 red bell pepper, seeded and finely diced
• ¼ cup olive oil
• ¼ cup red wine vinegar
• Worcestershire and/or, hot pepper sauce
• Cumin, salt and pepper
Recipe
Toss the beans with the corn, tomatillos, green onions and peppers. Add oil and vinegar and toss again. Add Worcestershire, hot pepper sauce, cumin, salt and pepper to taste. Refrigerate at least 3 hours before serving. Makes about 6 cups, 12 servings.
