Vegetable Strata
A vegetarian dish; good for luncheons. You can substitute your favorite vegetables or cheeses for those specified.
List of Ingredients
2 T. butter, plus more for pan
1 medium Vidalia onion, halved & thinly sliced
1 red bell pepper, seeded & thinly sliced
2 medium zucchini, thinly sliced
1/2 tsp. dried basil
1/2 tsp. dried marjoram
8 oz. mushrooms, thinly sliced
1 (1 1/2 lb.) loaf country-style white bread
2 Cups shredded cheddar cheese (I use sharp)
12 large eggs
2 Cups milk
Recipe
In a large skillet, cook onion on medium heat in 2T. butter until soft. Add red pepper, zucchini & dreid herbs; cook 5 minutes. Add mushrooms & cook until their liquid has evaporated. Set aside to cool.
Remove bread crusts (save for another use). Cut bread into 1" cubes. Butter a 9x15" glass baking pan. Layer half the bread on bottom of the pan. Cover evenly with the cooked vegetables. Sprinkle with cheese. Top with remaining bread. Whisk together eggs & milk; pour over strata. Press the top layer, making sure bread is moistened. Cover & refrigerate overnight.
Preheat oven to 350°. Bake strata for about 1 hr, until bread is puffy & top is golden brown. Makes 12 servings.
