    Oh-So-Good Strawberry Cake

    Recipe Introduction

    12 servings Hands on: 30 minutes Total time: 2 hours (includes baking and cooling time) If you've never made your own sweetened whipped cream, you'll be surprised at how simple it is. Or you can use a prepared nondairy whipped topping.

    List of Ingredients

    1 box yellow cake mix, plus ingredients listed on box
    2 cups heavy whipping cream
    1/2 cup confectioners' sugar
    1 teaspoon vanilla extract
    1 pound fresh strawberries, sliced



    Recipe

    Prepare cake as instructed on box for a 9-by-13-inch single-layer cake. Cool in pan.

    In a large, chilled mixing bowl, beat whipping cream, confectioners' sugar and vanilla until stiff peaks form. Spread whipping cream on top of cooled cake. Arrange strawberry slices on top.

    NOTE: I like to pipe a row of whipped cream around edge of pan for decorative purposes.
