Recipe Introduction
The term Buckeye Balls is code for delicious chocolate, peanut butter candy goodies. This recipe calls for shortening rather than paraffin
Yield: Makes 7 dozen
List of Ingredients
1 (18-ounce) jar creamy peanut butter
1-1/4 cups butter, softened
7 cups sifted powdered sugar (about 1-1/2 lbs)
3 cups semisweet chocolate morsels
1-1/2 tablespoons shortening Recipe
Process butter &I peanut butter in a food processor until thoroughly blended (or beat peanut butter and butter at medium speed with an electric mixer until blended). Add 3 cups podered sugar in 2 batches, processing after each addition until lmixture pulls away from sides of processor and is no longer crumbly.
Shape into 1-inch balls; chill thoroughly (until firm).
Combine chocolate morsels & shortening in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts, stirring occasionally (or microwave chocolate and shortening in a 2-quart glass bowl at HIGH 1 1/2 minutes or until melted, stirring twice).
Remove pan from heat, leaving chocolate mixture over hot water.
Use a wooden pick to dip each ball in chocolate, coating three-fourths of ball; place on wax paper. Carefully smooth wooden pick holes. Let candies stand until chocolate hardens. Store in an airtight container in refrigerator. Yield: 8 dozen
