•8 ounces lo mein noodles
•4 teaspoons soy sauce
•1 (14.5 ounce) can chicken broth, reserving 3 Tablespoons
•2 celery stalks, sliced ¼-inch thick
•1 small onion, cut in half and sliced
•2 tablespoons cornstarch
•2 cups cooked chicken, cubedRecipe
Instructions
1.Prepare lo mein noodles according to package directions; set aside.
2.In a large saucepan over medium-high heat, combine soy sauce and all but the reserved 3 Tablespoons over chicken broth.
3.Add the celery and onion and cook for 10 minutes, or until vegetables are tender.
4.In a small bowl, combine cornstarch and 3 Tablespoons of chicken broth; stir into the vegetable mixture to thicken.
5.Add chicken and cooked noodles and mix well. Cook for 3-4 minutes, or until chicken is heated through.
