List of Ingredients
2 medium potatoes, sliced thin
1 medium onion, chopped
1/2 cup celery, diced
1/4 cup instant rice, uncooked
1 pound lean ground beef
1 pound (15 1/2- or 16-ounce) can kidney beans, drained
Sauce:
1 can tomato soup mixed with dash of chili powder & Worchestershire Sauce, 1/2 cup water, salt & pepper to taste.
Optional: Sauce ingredients:
(I substitute 1 lrg. can tomato sauce)
Options: substitute corn for kidney beans
May cover with 4 strips of bacon, cut in half
Recipe
Grease a 2-1/2 quart casserole dish and layer the above ingredients in the order listed, seasoning each layer with salt & pepper to taste. Pour sauce over all.
Bake at 350 degrees for 1 1/4 hours or until done (I bake 30 minutes, covered then remove cover & bake approx. 45 minutes longer.) Serve hot. May be prepared ahead. Can be frozen.
Serves 6.
