    Petite Cheesecakes

    List of Ingredients

    Vanilla Wafers (optional)
    3 8-oz. pkgs. cream cheese, softened
    1 Cup sugar
    5 eggs
    1 tsp. vanilla extract

    TOPPING:
    2 Cups sour cream
    1/3 Cup sugar
    1/2 tsp. vanilla

    Recipe

    Place Vanilla Wafer in bottom of paper-lined muffin tin.

    Cream the cream cheese & sugar together until fluffy. Add eggs & 1 tsp. vanilla. Bake @ 325° for 40 minutes in paper-lined muffin tins filled 2/3 full. Remove from oven & allow to "sink in".

    Mix together the topping ingredients & frost cupcakes with mixture. Return to oven for 5 minutes.

    Cool & freeze (muffin tin & all, if desired). Thaw 30 minutes at room temperature when ready to serve. Top with fresh fruit or canned pie filling (cherry, strawberry or blueberry).

    *can place vanilla wafer in bottom of muffin liner before filling, if desired.
