    Recipe Introduction


    Billy sent in this recipe made with skirt steak, which is a delicious and full-flavored cut of meat but can sometimes be hard to find.

    It works just as well with flank steak, which is best cooked rare to medium-rare and sliced thin. Serve with fresh lime squeezed over the top if desired.

    List of Ingredients




    1/4 cup olive oil
    1 tablespoon Asian sesame oil
    2 tablespoons minced garlic
    1/4 cup fresh lime juice
    1/4 cup teriyaki sauce
    1 flank or skirt steak, about 1¾ pounds
    Salt and freshly ground black pepper




    Recipe



    Mix oils, garlic, lime juice, and teriyaki sauce in a heavy zip-top plastic bag.

    Add steak to marinade. Move steak around in bag to coat. Close the bag, pressing out air.

    Let steak marinate in the refrigerator for at least 2 hours or up to 24 hours.

    Heat grill until very hot.

    Remove steak from marinade and season with salt and pepper to taste. Grill on each side for about 2 to 4 minutes, or until cooked to desired doneness.

    Remove from the grill and slice thin.

    Makes 4 servings
