    Cuban Pork Roast

    Recipe Introduction

    from a small Cuban restaurant in Islamorada. Leftovers make a good sandwich.

    List of Ingredients

    3 lb. boneless pork leg or pork loin roast (I use pork top loin roast)
    6 cloves garlic, crushed
    1/2 Cup lime juice
    2 tsp. cumin
    1 tsp. salt

    Recipe

    With the point of a knife, make small slits all around pork. Combine the remaining ingred. in a bowl. Place the pork in a plastic bag with a sealed top & pour marinade over, seal & let sit overnight.

    Remove the pork from the marinade, place in a roasting pan & roast in a preheated 350° oven until thermometer reaches approx. 150° (temp. will rise after meat sits). Remove roast from oven, and let stand, covered with foil, about 20 min. Slice & serve warm, or let cool & slice for a cold meat platter or use to make Cuban Sandwiches.

    ***Good served with black beans & rice (Goya brand in box). Good sandwich served with mustard
