    Have Eye of Round at room temperature. Season liberally with black pepper, salt or your favorite seasoning.

    Preheat oven to 500°. Bake 5 minutes per pound. Then turn oven off and DO NOT OPEN oven door for 2 hours. The meat will be cooked perfect - with the inside pink.
