Fabulous Fajitas (Beef or Chicken)

Serves: 8 Servings
List of Ingredients
2 lb Beef skirt steak or skinless boneless chicken breasts
1/2 c Fresh lime juice
1/4 c Olive oil
4 Cloves garlic, minced
1/2 ts Salt and pepper
8 Flour tortillas, 8-inch
CONDIMENTS---------------------------------
Sour cream
Chopped cilantro
Grated cheddar cheese or monterey jack cheese
chopped tomatoes
Picante sauce
Avocado, slices
Onion, chopped
Optional: may want to grill sliced onion & green pepper in a little oil in a pan to go with it
Recipe
In a small bowl or zip-lock bag, combine lime juice, oil, garlic, salt & pepper; pour over meat. Marinade (covered) the beef in the refrigerator at least 30 minutes or longer (about 4-6 hours is best - NOTE: DO NOT marinade chicken for more than 60 minutes! Discard marinade.
While the meat marinates, prepare the condiments. Stack the tortillas & wrap tightly in foil. Heat tortillas in a preheated 350° oven for 15 minutes.
Drain meat, discarding marinade. Grill meat 4 to 5 minutes per side, or until done to taste. Traditionalists use an outdoor grill, but a heavy stovetop griddle or cast-iron skillet works well, too.
To serve: let guests assemble their own fajitas.
