Italian Sausage & Peppers

3 green peppers (or a mix of colors)
1 large onion, if desired
3 T. olive oil
salt & pepper, if desired
1 lb. hot or mild Italian sausage
1/3 C. red wineRecipe
Cut peppers into chunks or slices. Saute peppers and onions (if using) on top of stove in olive oil until they begin to soften. Remove from skillet & set aside. Brown sausage in same pan; add wine. Place in ovenproof baking dish; cover & bake @ 350° for 30 minutes. Uncover and stir, then add peppers & onions. Cover and bake 25 minutes longer.
