    Oven-Roasted Vegetables and Pork

    List of Ingredients

    1 1/2 lbs. boneless pork tenderloin
    Vegetable cooking spray
    1 lb. carrots, peeled & cut into 2" pieces
    2 lb. new potatoes, halved
    1 med. onion, cut into 6 wedges
    1 T. olive oil
    2 tsp. dried, rosemary, crushed
    2 tsp. dried sage, crushed
    1/4 tsp. salt
    1/4 tsp. pepper
    garnishes: fresh rosemary, sage sprigs



    Recipe

    Brown pork in a skillet coated with cooking spray over medium-high heat. Place in roasting pan coasted with cooking spray; arrange vegetables around pork. Drizzle with olive oil; sprinkle evely with rosemary, sage, salt & pepper.Bake at 450° for 30 minutes or until a meat thermometer inserted into thickest portion registers 155° and vegetables are tender, stirring vegetables occassionally. Garnish, if desired. Yield: 8 servings
