    Porcupine Meatballs

    Recipe Introduction

    A very forgiving recipe! The kids loved this very plain when they were little. As they grew older, we added more seasonings! Orig. recipe: 1lb. gr. beef, 1/2 C. raw rice, salt/pepper, dash Worchestershire, 1 T. diced onion, 1 (46oz.) can tomato juice. Combine ingred, make into balls, place in pan, pour juice over, cover & bake 30 min. at 350°.

    List of Ingredients

    MEATBALLS:
    1 lb. lean ground beef
    1/2 C. raw rice
    1/2 C. water
    small onion, chopped (optional)
    1 tsp. salt
    1/2 tsp. pepper
    1/2 tsp. celery salt (optional)
    1/2 tsp garlic powder (optional)
    dash Worchestershire Sauce

    SAUCE:
    2 8-oz. cans Tomato sauce
    2 tsp. Worchestershire sauce

    OR: 1 46-oz. can tomato juice

    OR: can tomato soup + water

    Recipe

    Heat oven to 350•. Mix meatball ingredients & shape mixture by rounded tablespoons into balls. Place meatballs in ungreased baking dish.

    Pour sauce over meatballs. Cover; bake 45 minutes. Uncover & bake 15 minutes longer.
