    Sausage and Peppers in Red Sauce

    List of Ingredients

    5-6 lbs. mild or sweet sausage
    2 lbs. Italian tomatoes
    5-6 green peppers
    4-5 onions

    Recipe

    Cut sausage to serving size & brown in frying pan.

    In a small roaster (6 qt.), add about 1/3 of each: meat, then quarter tomatoes & place in roaster. Add thick sliced green peppers and sliced onions. Add another layer of sausage, more tomatoes, green pepper and onions. Roaster will be full. Place lid on roaster & bake on 200-250°. I cook this all night & then it is ready in the morning for any event.

    Turn up temperature & cook for a few hours during the day if needed for evening event.

    This does cook down & the steam provides the juices.
