I was at the Bloomingdale's at Boca Town Center today talking to the nicest people. I had the joy of meeting Pat Clark who manages the stores two restaurants: 40 Carrots and the Petrossian Rendezvous on the third floor. I talked to her for a story and she says one of the most sought after recipes from their eateries is for their Lemon Basil Salad Dressing.
She's happy to give it out. It's light, simple and fresh tasting.
Put 1 cup fresh lemon juice, the contents of 6 individual packets Sweet 'n Low and 2 hefty bunches fresh basil in a blender. Puree. Then with the machine running add 1 cup olive oil and 1 cup Mazola Right Blend.
