    Bibb Lettuce Salad with Lemon Cream Vina

    List of Ingredients




    4 medium heads Boston or Bibb lettuce, washed, dried, and torn (about 14 cups)
    1 medium red onion, sliced into thin wedges
    ¼ cup olive oil
    2 tsp. finely shredded lemon peel
    3 Tbsp. lemon juice
    2 Tbsp. whipping cream
    1 Tbsp. snipped fresh chives
    1 clove garlic, minced
    ¼ tsp. salt


    Recipe



    Place lettuce in a large salad bowl. Separate the onion into strips and add to the lettuce. For vinaigrette, in a screw-top jar combine olive oil, lemon peel and juice, whipping cream, chives, garlic, and salt. Cover and shake well. Pour over lettuce; toss to coat. Serve immediately. Makes 8 servings.
