1 tablespoon dry mustard
11/2 tablespoons flour
1 teaspoon salt
1/4 teaspoon fresh-ground black pepper
2 cups milk
2 egg yolks
1 teaspoon Worcestershire sauce
1/4 teaspoon Tabasco sauce
2 cloves garlic, minced
1 teaspoon anchovy paste
1/3 cup red wine vinegar
1/3 cup olive oil
In a microwave-safe dish, whisk together mustard, flour, salt, pepper and milk until smooth. Cook on high power 3 to 5 minutes until mixture thickens, whisking every minute.
Beat egg yolks in a small dish, add a little hot mixture and whisk to combine. Then whisk yolks into hot sauce in microwave-safe dish. Microwave on medium power 1 to 2 minutes, stirring every 30 seconds. Stir in Worcestershire sauce, Tabasco sauce, garlic, anchovies, vinegar and oil. Refrigerate until ready to use. Just before serving adjust seasoning, if desired. Makes 22/3 cups dressing.
