Sorry, but the chef at 84 Thai Food (979 W. State Road 84, Fort Lauderdale, 954-462-5105) said their recipe for Peanut Dressing is proprietary. We found one that we like a lot, however, and hope it works for you. It goes well on cabbage or broccoli slaw, and is good as a dip for spring rolls, as well as on a plain green salad. Use either a chunky peanut butter, or add chopped peanuts -- they're needed for crunch.
List of Ingredients
DRESSING/SAUCE
• 2 tablespoons chunky peanut butter
• 1 tablespoon rice vinegar
• 1 tablespoon honey
• 1 1/2 teaspoons water
• 1 1/2 teaspoons low-sodium soy sauce
• 1 tablespoon sugar
• 3/4 teaspoon salt
• 1/4 teaspoon scant cayenne pepper
• 1 pinch crushed red pepper flakes
• 1 tablespoon sesame oilRecipe
Whisk together peanut butter, vinegar, honey, water and soy sauce in a small bowl.
Stir in sugar, salt, cayenne and red pepper flakes.
Add oil and continue whisking until smooth and emulsified.
Use immediately, or refrigerate for up to five days. Bring to room temperature and whisk before using.
Makes about 1/2 cup dressing.
