Q: The Embers restaurant had the best salad dressing, which you published a long time ago. Could you do it again? Thanks.
A: The Embers was a glamorous destination for Miami Beach's golden crowd from 1948 until it was destroyed by fire in 1984.
The signature house dressing was a splashy orange color that many remembered fondly. A 1993 request for the recipe was fulfilled by Dr. Allan S. Land of Miami Beach, who wrote:
'A number of years ago, my partner and I had the opportunity to perform surgery on one of the Embers' chefs. In 'payment' for the surgical procedure, he furnished us with this recipe. I hope you and your readers enjoy it. We certainly do.''
• ¼ cup sweet pickle juice (from a jar of sweet pickles)
• ¼ cup orange juice
• 2 garlic cloves, crushed
• 1 teaspoon yellow mustard
• ½ cup sugar
• 1 teaspoon paprika
• Juice of 2 lemons
• 1 tablespoon Worcestershire sauce
• 1 hard-cooked egg (optional)
• A few black olives (optional)
Recipe
Process the mayonnaise, ketchup, sour cream, pickle juice, orange juice, garlic, mustard, sugar, paprika, lemon juice and Worcestershire in a blender for just a second or two. Refrigerate 24 hours before serving.
If you like, chop the egg fine and garnish salad plates with egg and olives. Makes about 2 ¾ cups dressing.
