1 package mixed salad greens
1 cup black olives
3 plum tomatoes, cut into wedges
1 small red onion, thinly sliced
1/2 medium cucumber, peeled and cut into wedges
Dressing-
1/2 cup extra virgin olive oil
1/4 cup lemon juice
1 clove garlic, minced
1 tablespoon chopped oregano
1/4 teaspoon pepper
1/4 teaspoon salt or to taste
Topping-
1/2 cup coarsely chopped walnuts
8 oz. feta cheese, crumbled
Recipe
Mix oil, juice, garlic and seasonings for dressing.
Toss greens, olives, tomatoes, cucumber and onion with dressing. Spoon onto serving platter. Toast walnuts in skillet on high heat and top salad. Sprinkle with crumbled feta cheese.
