HOT LIME AND BACON DRESSING

• 1 tablespoon bacon drippings (use the bacon as a salad ingredient)
• ¼ cup finely chopped onion
• ¼ cup sugar
• 1 tablespoon cornstarch
• ¼ teaspoon salt
• 1/3 cup lime juice
In small skillet, cook onion in drippings until transparent. In a small bowl combine sugar, cornstarch and salt. Stir in 2/3 cup water and the lime juice. Pour into skillet and cook over medium heat, stirring constantly, until mixture thickens. Pour over salad, toss and serve immediately. Makes 1 cup dressing, 8 (2-tablespoon) servings.
