Publix used to have a delicious, nutritious Health Salad. It was a coleslaw with a tangy vinaigrette dressing. It kept well in the fridge. Thanks to the community relations manager for Publix, we have the recipe for the refreshingly delicious Health Salad. It is no longer available at the Publix deli departments, but because it is so easy to make, you will be able to keep a supply in your refrigerator.
The dressing is an amazingly light but powerfully flavored mixture of water, vinegar, minced garlic, a bit of sugar, some herbs and a dash of crushed red pepper flakes. It is that last dash that supplies the tang with every bite.
You can put it together quickly by using pre-packaged shredded cabbage.
Water
1/3 cup diced carrots
3 cups shredded white cabbage
1/3 cup diced red onions
½ cup diced red bell peppers
Vinaigrette Dressing:
½ cup water
3 tablespoons white wine vinegar
1-1/2 teaspoons sugar
1-1/2 teaspoons Morton Lite Salt
1-1/2 teaspoons minced garlic
½ teaspoon dried parsley flakes
¼ teaspoon crushed dried oregano leaves
Dash dried red pepper flakes or to taste, crushed
Recipe
To make salad: Bring a pan of water to a boil over medium-high heat. Add the carrots, return to a boil and simmer about 2 minutes. Drain well and cool. Place in a large bowl and combine with the remaining ingredients.
To make dressing: Whisk together all the ingredients until the sugar and salt are completely dissolved. Drizzle the dressing over the salad and toss well. Refrigerate several hours before serving. Toss well again before serving. Makes 4 servings.
NOTE: If a pre-shredded mixture contains some purple cabbage, that is fine.
